engine miss

i have a 2005 750 brute force and it seems to idle fine but when it’s in gear and start to go it seems like it’s lagging out until you get it full throttle then it starts picking up speed and acceleration any help or ideas would be appreciated

Could be many things like low battery power,low float levels, leak fuel pump, stuck tank vent check valve, incorrect valve lash, low compression, other power issues line bad buss connector as all 05's had, valve timing problem, warn cam lobes. It could also be a problem with the CVT system or even the rear wet brakes if the pinion nut had backed off like it has done with so many hundreds. Start with this list and check them off as you go. If you don't have a service manual..get one.
i had someone work on it before and they adjusted the valve’s because it had a loud back fire at idle and now it does this so i’m guessing he adjusted them wrong?

Possible. That stuff you really need to do yourself.
how fast should these things really run because mine when it did run somewhat right only seemed to really only do good till 50 then felt like it was all it had

Running right most were between 58 and about 62. The RPM limiter is the stopping point.
