I have an 07' brute, it was running fine,, killed it then started to ride it later and it was spitting and sputtering at around 25-30 mph, the plugs were fowled out, clean em up and still no good. It back fires real bad and smells rich, it has smelt rich for some time now, and honestly not sure which way the choke lever goes to choke.....on the choke symbol or on the arrow side,it doesn't seem to respond to either dirrection, so not sure if plungers are stuck or another issue with the carbs. Please give me some good ideas on where to start or ideas on trouble shooting.

Yeah sounds like the plungers are stuck open. Cable problems first due to rust. Choke off is pushed in or toward the center. If its making no difference, its or they are open and stuck. You might need a fresh set of cables, but they are pretty cheap and easy to install.
Thanks, thought it could be that, and on the choke....towards the dash its off and towards the brake lever its on? I have also read on other forums I can dissconect the choke all together since I have it snorkeled, is that a good idea, if so how do I dissconect it?

Yes on the choke lever positions. As for disconnection, you will still have to have the plumgers seated and springs pushing aginst them sealing the port off.
I always feel that you should keep everything operating as it was supposed to. Keeping it hole and complete keeps the value and reliability up.
i have seen guys tie the choke leaver with a tie rap so you cannot pull it on ,an use your hand on the snorkel to choke it
